The sambal should enhance the main dish, especially the broth, by giving it an extra kick, but it shouldn’t alter the taste of the dish. For that reason, the sambal has a very few ingredients, mainly chilli and garlic. To soften the flavour, the ingredients are either steamed or boiled.

Ingredients
- 15 bird’s eye chillies
- 3 cloves garlic, peeled
- Pinch of salt
Instructions
- In a saucepan, boil the chillies and garlic for about 7 minutes.
- Blend all the ingredients using a mortar and pestle or food processor, to make a coarse chilli paste.
- Transfer the sambal in a small bowl.
