Description
This is a simple stir-fried dish consisting of beansprouts and tofu, and is a great balance of fibre and protein for a complete vegan meal.
Ingredients

- 200g beansprouts
- 1 block of tofu, cut into small rectangles
- 3 shallots, peeled and sliced
- 2 cloves garlic, peeled and sliced
- 2 big red chillies, sliced diagonally
- 2 tsp chopped spring onion
- 3 tbsp vegetable oil
- Salt to taste
Instructions
- Soak the tofu pieces in salt water for 10 minutes. Drain, and dry the excess moisture with a paper towel.
- Lightly fry the tofu on medium-high heat till they turn a light golden-yellow, around 5 min. This is to firm up the tofu and prevent it from breaking up later on. (optional)
- Saute the shallots for 3 minutes on medium heat, till they soften.
- Add the garlic and red chillies. Saute for another 2 minutes.
- Add the spring onions. Saute for 1 minute.
- Add the beansprouts, tofu, and salt to taste. Stir-fry for 5 minutes.
- Turn off the stove and serve.
Notes
- Remember to choose a firm tofu (tau kwa in the local Singapore Chinese dialects), rather than the silken variety.
