This is a particular sambal added in soup or soto (a type of Indonesian soup) dishes. The sambal should enhance the main dish, especially the broth, by giving it an extra kick, but it shouldn’t alter the taste of the dish. For that reason, the sambal has a very few ingredients, mainly chilli and garlic. To soften the flavour, the ingredients are either steamed or boiled.

Description

This recipe is for a sambal that is meant to accompany Indonesian clear soups as well as soto, a popular meat-broth soup. Quick and easy, it uses very few ingredients and its main purpose is to enhance the flavour of the soup.


Ingredients

Scale
  • 15 bird’s eye chillies
  • 3 cloves garlic, peeled
  • Pinch of salt


Instructions

  1. In a saucepan, boil the chillies and garlic for about 7 minutes.
  2. Blend all the ingredients using a mortar and pestle or food processor, to make a coarse chilli paste.
  3. Transfer the sambal in a small bowl.
